A smooth-skinned variety that has been a favourite since the 1820s. The sweet nutty flavour improves if stored in the soil over winter. Sow in spring in cold climates and in autumn in warmer climates.

Parsnip 'Hollow Crown'

Having the title of the oldest parsnip in cultivation, 'Hollow Crown' is named for the depression at the top of the crown where the foliage emerges. Soak seed to improve germination. Parsnip is a long-growing crop needing around 100 days to harvest, but well worth the time and space as the flavour when harvested fresh from the garden elevates when roasted or mashed.
How to grow

Parsnips prefer an open, loose soil. Sow seed directly into shallow furrows. Parsnips are not hungry crops, in fact, too much nitrogen in the soil will result in forked roots. Parsnip seed will take quite a few weeks to germinate, a sheet of semi permeable material can be laid over the seed bed to prevent the soil drying out, but remove the material as the seed germinates. Protect young seedlings from snails. Harvest after frost for optimal flavour.
